Even though our knives utilise the best heat treatment techniques, the stainless steel is the true essence of the blade. Given that knives tend to become a lifelong companion, we believe we must educate you not just about what N690 Böhler Steel entails, but also about why it is the best choice of kitchen knives for you!
Our knives are known for having the ideal balance of edge retention and performance. An extra edge is provided by mixing the alloying element of cobalt. The presence of cobalt in the steel results in a unique uniformity, providing a fine and consistent edge, improving edge retention, and sharpening receptivity. N690 stainless steel is known for its corrosion resistance due to this combination of various alloy elements. Böhler steel is resistant to deterioration and corrosion from elements often present in a kitchen environment such as humidity, salt, and acidity.
A thermal bath process is also used to heat treat and temper the steel. This incredible hardness yields the ability to resist deformation when stress and force are applied. We have reached a value of 58 HRC although this is not our only goal because hardness without important flexibility is harmful.
It is not easy to have knives that with such high hardness values remain sharp for a long time and at the same time easy to sharpen.
The critical factor is the flexibility that prevents the edge from microfractures, ruining the sharpness itself.
